As the title suggests, with Simbiosis Ibiza you can’t go wrong. Fully plant-based, a.k.a. vegan, with macrobiotic, raw and gluten-free options, some relaxing tunes and in the middle of Ibiza town, the restaurant truly is an oasis in the city. The lovely team completes the experience – and always keeps us coming back for more.
Being the frequent customers that we are, we have tried about everything on the menu, and have never been disappointed. This time, we went tapas-style (‘veganitas’, as their new option is called). We had a refreshing gazpacho-style soup followed by rollitos de verano, croquetas, tosta de sobrasado vegano and two mini burgers – what a winning mix! As for the rollitos (summer spring rolls), I don’t think we have ever visited Simbiosis without taking these as a starter, that is how lovely they are. The croquetas are a vegan spin on the traditional meat-based croquettes (yum!) and the tosta is basically toast with vegan cheese and tomato, a bit pizza-like (yum!).
Saving the best for last- Simbiosis has a different variety of delicious desserts every day. My personal favourite is their home-made tiramisu. Sadly, we haven’t seen it in a while – but that means I’m finally exploring all the other options! This time we had a lemon-coconut cake which I loved (surprising, as I’m not not a fruity dessert person). All in all, of the ever-rising variety of vegan options in Ibiza, Simbiosis is still our favourite place to go.
